Recipe 1 Corn Casserole:

  CORN CASSEROLE

1 box Jiffy Cornbread Mix

1 can Whole Kernel Corn, drained

1 can Cream Corn

8 oz. Sour Cream

1/2 stick Butter

Mix all ingredients together and bake in 400 degree oven, 25-30 minutes. Top with grated Cheese and put back into oven until melted.

Recipe 2 Stuffed Turkey:

STUFFED TURKEY ROLLS

12 slices Turkey Breast fillets (raw)

1 pkg. Pepperidge Farm Cornmeal Stuffing Mix

  Butter

  Salt and Black Pepper

Prepare Pepperidge Farm Cornmeal Stuffing Mix according to package directions.

Salt and Pepper the raw turkey breast fillets according to taste.

Spread about 2 Tablespoons of prepared stuffing in center of turkey breast and roll.  Place rolls, seam side down, in 9 x 13 oblong baking dish, that has been buttered or sprayed with non-stick cooking spray.

Place balance of stuffing around the fillets and brush each on top with butter.  Bake at 375 degrees approx 45 minutes.

Serve hot with turkey gravy or cranberry relish.

NOTE:  you may substitute thinly sliced pork loin for the turkey

Recipe 3 Meat Loaf:
     MEAT LOAF

2 lbs Lean ground beef or sirloin

3/4 c. Bread Crumbs

2 Tbsp. Worchestershire Sauce

1  Egg                

1/2  Onion, Chopped

1  small 8oz can Tomato Sauce

  Bacon Strip

  Salt and Pepper to taste

In large bowl, place all ingredients together and blend well.

Form loaf in baking dish and cover with tomatoe sauce.   Place thin slices of lean bacon on top of loaf.

Bake at 400 degrees for about 45 minutes until done.  Slice and serve.

Options:  May add 1/2 Chopped Green Bell Pepper for taste

Recipe 4 Pina Colada Cake:
   PINA COLADA CAKE

1  Yellow Cake Mix

1 can Coco Lopez Cream of Coconut

  Cool Whip Dessert Topping

  Shredded Coconut

  Maraschino Cherries

Prepare yellow cake mix according to package directions.

Pour in  a prepared 9 x 13 baking dish and bake at 350 degrees for approx.  45 minutes, or until done in center.

Immediately poke holes with wooden spoon in cake and pour Coco Lopez over cake while hot.

Let cake cool completely and top with cool whip.   Sprinkle top of cake with shredded coconut and garnish with Maraschino Cherries.

Serve cold.

Optional:  You can toast the coconut along with slivered almonds and sprinkle on cake too.
